Recipes

There are many ways of cooking squash, these are some of my favourites.  The first one uses a Blue Banana squash, because I just happened to have photos of this one, but obviously many other varieties are suitable.  Just experiment!

 

 

 

First, peel your squash.  The peeler in the photo is a Powerlance and is the best one I've ever used. www.kitchengadgets.com.au

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Cut the peeled squash into chunks, coat with olive oil and seasoning.

Roast in a hottish oven for about 45 minutes.

 

Mmmm........delicious!

 

 

 

V-slicer

 

 

I use a V-slicer a lot.  The one I have is made by Borner, but there are many types available.  I shred the squash into 'matchsticks', fry some onion in olive oil then add the squash and cook for a few minutes.  This is delicous served with rice or pasta.

 

 Soup

The soup opposite was made with Tonda Padana, onion, potato and carrot.  I also added a cupful of lentils and pastina.

I don't weigh or measure the vegetables and my soups never taste the same twice!
